The history of potatoes is a mixed bag. The crop sustained the country of Ireland — until the famine. In recent years, potatoes were plentiful but maligned for their carbohydrate load. Greg Atkinson is a chef, writing and cooking instructor. He thinks the problem in both instances is a lack of diversity. He joins us today with a more complex view of the tasty tuber.
